A brief history of Scottish Highlands

LOW FAT / LOW CHOLESTEROL

With a thick hide and coarse hair, highlands evolved without a fatty insulation layer around their bodies. Rather, all of their produced fats are marbled into their meat. The result is are fat and cholesterol levels similar to that of chicken.

ENVIRONMENTALLY-FRIENDLY

Scottish Highland cattle are smaller, more efficiently-framed animals, and are known to be hardy grazers. This means farmers can add Highlands to their pastures with less environmental impact than other cattle breeds.
